A Recipe!

Alas! A Recipe. Of course its not the raw cinnamon rolls and pizza but a much easier recipe. Those pictures got deleted with the file I lost and wrote/cried about on instagram. Between losing the file and my mind being on photo sessions, I was horrible at grocery shopping last week. I felt like I barely ate and didn't have a taste for anything. I was so stressed out that I would go to eat and felt nauseous. I learned a big lesson last week from headaches and lack of water/food last week. So I came up with a super nutritious salad dressing to get back into eating enough!

Beet Salad Dressing

  • 1 medium sized beet (We prefer golden beets over regular beets. They are sweeter and less "earthy".)
  • 2 carrots chopped
  • 2 teaspoons lemons juice
  • 2 teaspoons dijon mustard
  • 1/2 cup pistachios or cashews (I used cashews but would have rather used pistachios)
  • 1/2 avacado
  • 1 teaspoon cumin

Use blender/vitamix for a smoother dressing or use a food processor for a more chunky texture to be eaten on red leaf lettuce, ending up more like a lettuce wrap. I would personally recommend using this salad dressing on a chunkier salad. All of my salads lately have been cabbage based and very hearty so this dressing has been extra delicious. 

Why are beets are great for you?

Beets are incredible for your digestion system and lymphatic system (I'm all about supporting your lymphatic system!) Beets contain a pigment called betalins. to explain a very in-depth process.
