Okay, I know I say that a lot. Almost any new food I try is the "best thang thats ever happened to me" BUT this right here is a game changer. I bookmarked this last month and have been dreaming since. My hubs is a huge mac & cheese fan and lets face it, It doesn't make the list of things we eat in this house very often. SO, finding this felt like I hit the jackpot. I had it all tucked away safe for a snowy day and March 1st hit yesterday!!! Insert party everyday for 31 one days because it is birthday month AND anniversary month, soooo it's the best month evaaaa! To be honest I was feeling super down yesterday. My body is changing in such a good way since eating raw and my emotions are trying to figure themselves out ( being a girl is fun right?). I would get a text message and just cry, my husband would look at me and I would just cry, Id do a load of laundry and CRY.  So, I broke down and decided it was time to splurge on this healthy goodness. My favorite food blogger ever made  " Marconi & Tease" . The cheese is made out of nutritional yeast and I sprinkle that shit on everything, literally everything. GOOD NEWS: This this dish is still veggie filled, gluten free, vegan & delicious!

Note: I didn't use the beans and the "cheese" sauce came out just fine and I used smoked paprika instead of plain. Now go make this for dinner tonight because one bowl could feed an army and its husband approved!
