Ah I'm finally back with some recipes! Austin helped me get on a blogging schedule and reminded me of how much I enjoy posting about food. I shared on instagram a while back that since being pregnant I am eating around 75- 80% raw instead of fully raw. I was sick my first trimester and really wanted bread and then needed to add more protein into my diet. Since I didn't want to add it in while eating raw, even though you could get plenty of protein eating raw I just chose not to. I added in things like Greek yogurt, eggs and fish to up my protein for the baby. I still have a hard time reaching my protein goals but thats because I'd rather eat fruit instead of heartier meals! I fully plan to get back to around 100% when I have our little girl in my arms! Those greens are so good for milk supply and I'm still super passionate about the benefits of eating a raw vegan life style!
So today we have some super simple raw granola!
- 1 cup. Organic quick oats (these are easier to digest than normal oats uncooked)
- 1/2 cup. raw cashews
- 1/2 cup. raw thin sliced almonds
- 1/4 cup raw pumpkin seeds
- a handful of dates cut up into bite size pieces
- 1 teaspoon cinnamon + (choice of 1/2 teaspoon nutmeg or ginger)
- 1/4 cup mixture of flax seed, shredded coconut and chia seeds
I like to keep mine in a covered jar in the fridge. In the morning I pour it into a bowl and slice up a banana or blueberries with a little bit of raw honey and then almond milk or greek yogurt!
There you have a SUPER SUPER EASY raw breakfast! Which its always a great idea to start your morning off raw. Not only is it great for digestion but also great way to kick start your day with energy.
You can add any nut or dried fruit to this as well. I prefer cashews and almonds to walnuts. If you want to get crazy you could soak your nuts and then blend all of these ingredients together and dehydrate them. If you do this you have to keep the batch stored in the fridge due to the soaked nut but it will have more of a cooked granola feel while still being raw and getting all of the benefits!
