Cinnamon Cashew Coffee

So, today it’s snowing, and I’m in shock. I think this is the earliest it’s ever snowed since we lived here and I’m not going to lie, it made me so bummed! This Autumn weather has been the best and I’m not ready for all the leaves to disappear yet. So I whipped up this warm cashew cinnamon coffee to cheer myself up and took the girls on a walk to find all things Fall.

What you’ll need:

High speed blender
1 cup of coffee …big or small you choose based on your need for caffeine
1/4 heaping cup of cashews (raw or roasted works! I liked roasted!)
Honey to taste (I like to live on the wild size and just squeeze the bottle until it feels right..)
a few grinds of salt
sprinkle of cinnamon

Blend everything except the cinnamon, pour your creamy frothy coffee into a cute handmade mug ,sprinkle with cinnamon and cheer up because the sun is going to come out and the leaves are still going to still be around! At least that’s what I like to tell myself…

I’m usually not a fan of cashew milk but I was so surprised how the cashews blended together so easily and how yummy the nutty taste turned out. I added cinnamon because it felt festive but nutmeg and a little bit of clove would be good too! We have a vitamix but any high speed blender should do the trick.
