Vegan Pumpkin Spice Latte
HAPPY FALL YALL! I am so stoked to be able to share this Vegan Pumpkin Spice Latte with you! Fall for me is filled with all things pumpkin, but you guys know I am super particular about what we put into our bodies. So, I always make all the “pumpkin things” with real organic pumpkin and have fun creating recipes that are still really tasty but not filled with artificial ingredients. Don’t get me wrong I use to be Starbucks PSL person waaaaaaay back in the day. I was really happy when they changed their recipe a few years ago and made it with actual REAL pumpkin (since it wasn’t before) but it actually has dairy in it even if you choose an alternative milk + 50 other ingredients I don’t want to put into my body so it’s a hard pass these days. But don’t worry, this is so easy and yummy and will leave you feeling good!
1/3 cup pure maple syrup
1/3 cup unsweetened pumpkin purée
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon fine sea salt, or to taste
1/2 teaspoon pure vanilla extract (would be so incredible if you had fresh Vanilla)
1 shot of espresso
frothy milk of choice (New Barn froths the absolute best for an alternative milk)
Whisk together syrup ingredients in a saucepan and simmer for 5 minutes. Adjust to taste and pour syrup into a bottle. If it’s too thick you can add a tiny bit of water to thin, but it will mix into your warm drink easily anyway.
To assemble your latte you will froth your milk, put 1 tablespoon of Pumpkin mix into your cute tumbler, pull your shot, pour your milk and garnish with a dash of cinnamon or pumpkin pie spice
I think this recipe has the perfect amount of sweetness but if your looking for a little more you can add 1/4 cup coconut sugar or just double the pure maple syrup. I really feel like this is best with espresso to get that full rich flavor but you could certainly mix this with strong full bodied coffee. Our frother is from Nespresso and it is linked below. Frothy milk makes my heart happy! You can also froth in a coffee press by pumping it very fast for 30ish seconds. Store syrup in fridge for a week.
