Sharing my favorite salad with you all today! It's heavy on the greens and healthy fat full of vitamins and pretty dang delicious. What you'll need:
•Chopped Kale (or any type of your favorite green. Spinach is too soft for me so I like Kales crunchy texture)
• Roasted Veggies
• 1 whole Avocado
• Hemp Seeds
• Olive oil
• 1/2 cup Tahini
• 2-3 cloves of garlic minced
• 1-2 Tbsp Tamari
• a sprinkle of salt
• 1-2 Tbsp Maple Syrup
• 1/4 Cup water to thin
•half a lemon squeezed if you love that lemon zing.
If using kale take a few minutes to pour some olive oil over your selected amount and massage the kale. I know it sounds weird and pointless but it helps break down the fiber in the kale to help your stomach digest it better! I've done it both ways... massaged and not massaging and definitely notice a difference.——————————————————
Roasted veggies + Quinoa! I prep all the veggies and quinoa at the beginning of the week. Veggies like potatoes, sweet potatoes, onions, peppers, red cabbage, and zucchini. I roast them in my favorite oil and then add pink salt and a little bit of pepper. I heat them back up and then put them on the salad because I like the mix between warm and cold but you could totally eat them cold once cooked.
Prep salad dressing, adding more tamari or maple syrup based on taste. I always add more garlic and some fresh lemon is great too). Start with your massaged kale, add your veggies, quinoa (I eat this cold on salads), Smash and entire avocado over your salad, add a heavy sprinkle of hemp seeds and add dressing. Mix up and dive in!
A few notes.
Hemp Seeds are a complete protein and providing all nine essential amino acids. Avocados are full of healthy fat for your brain and packed full of vitamins like C, E, K, and B-6 along with Omega 3 fatty acids. Sweet potatoes are packed full of fiber and minerals including iron, calcium, selenium, and B + C Vitamins. Kale is packed with Folate. Tahini is a superfood and immune system savior! It's so yummy in salad dressings. and quinoa is packed with fiber, protein, and magnesium.
